CHUMMUS
Mediterranean Blend
Chummus
An easy dish that’s a must have at every shabbos meal! Just think creamy dip and hot fresh Challah!!
1 can chic peas drained
3 garlic
2 Tbsp lemon juice
Oil
1 tsp Union Mediterranean Spice Blend
➡️throw everything into a blender and voila! Done! I did not write amount for oil, I slowly put it through the feed of the food processor. If you want your hummus more chunky then put less oil. And for a more creamy consistency put more oil.

OYSTER STEAK
Rosemary Garlic Blend
Oyster steak
The easiest. Steak. You. Will. Ever. Make.
Note** if your butcher does not have oyster steak any quick grill steak with work. Such as rib steak, London broil or hanger steak
1lb oyster steak
Coarse sea salt
1 tsp Union Rosemary Garlic Spice Blend
Oil
➡️score the steak (make slight cross cross lines with a knife) and very lightly drizzle oil on it
➡️rub the spice well over the meat.
➡️grill on high for 4 minutes each side ❗️you have to know your grill. Mine works very fast. When I do it on a grill pan I do it about 5-6 minutes each side. You will have to play around until you get your desired doneness. ❗️this grilling time is for medium rare.
❗️when reheating it for shabbos DO NOT put in the oven or it will continue to cook and totally dry out. I leave it near the stove and let it come to room temp.
️will freeze well but best served fresh

APPLE & CREAM COBBLER
Apple Crisp Blend
A delicious and class recipe, taken up a notch or 3 with the addition of creamy custard.
Note**if you cannot find vanilla custard. Vanilla pudding prepared according to package directions will also work.
To make the apple layer:
4 cortland apples diced
2 Tbsp lemon juice
1 cinnamon stick (or tsp cinnamon)
1 tsp vanilla
➡️place the apples in a pot and turn heat on low. You will hear the apples start to simmer and break down. Add the rest of the ingredients and cover. Let simmer about 15 minutes mixing often so bottom doesn't burn (❗️you're essentially making compote but just not letting the apples cook down all the way)
To make the crumbs:
1/2 cup oil
1 cup sugar
3/4 cup flour
1 tsp Union Apple Crisp Spice Blend
➡️mix together and crumble.
Vanilla Custard
➡️to assemble the cobblers, place some crumbs on bottom of a muffin cup (I got fancy ones but any will do) and then some apple and a dollop of custard and crumbs on top
➡️bake 350° for 45 minutes
️freezes amazing

MEAT & POTATOS
Hot Stuff Blend
The weather took a turn! Yes I just did that! Spoke about the weather! Which means I crank out the Dutch oven and warm cozy dishes! And a little heat from hot stuff spice to warm our bodies!!

2 medium onions diced
Oil for sautéing
1 package @meal_mart hotdogs
2 packages @meal_mart salami slices
6 medium potatoes peeled and diced small
2 Tbsp paprika
1 tsp Union Spice Blends Hot Stuff
1 Tbsp salt
2 tsp black pepper
1 tsp smoked paprika
➡in a pot sauté the onions in the oil until they start to turn translucent.
➡Add the hotdogs and let them cook and start to slowly brown at the edges. Then add the salami once everything starts to get very fragrant
➡add the spices ❗if you are nervous of the heat you can always use 1/2 tsp. and then the potatoes and stir very well to incorporate everything
➡add about 3/4 cup water
➡cover and let simmer for about 45 minutes until the potatoes are tender (you don’t want them getting too soft or they will turn to mush)

Potato Kugel Chicken
Mediterranean Blend
The recipe you all love from Faigy’s page! The one she makes all the time! The one you all go crazy over!

1 package of bone in chicken cut up
7 medium potatoes
2 onions
1 cup oil
3 eggs
1 tbsp Mediterranean Union Spice Blend
➡Peel the potatoes and set aside in a bowl of cold water to prevent the potatoes from oxidizing.
➡Peel and cut the onion into 4 and set aside
In a food processor fitted with the “s” blade
Add the potatoes and onions and place the cover on and pulse a few times now add the rest onions, salt and pepper and and eggs and oil and turn on until everything is finely ground
Pour the kugel mixture into a 9x13 pan or a oven to table baking dish
➡Gently place the chicken on top of the kugel mixture making sure to leave space between each piece and sprinkle the spice blend on top of the chicken (it’s ok if some gets on the kugel)
Bake at 400° for an hour and 20 minutes or until the kugel is crispy on top (sometimes I can take longer you want it to be brown and crispy on top)

Coffee Crumb Cake
Apple Crisp Blend
When a cake needs to get hidden before yomtov so it doesn’t get eaten. You know it’s a winner!
1 cup oil
2 cups sugar
2 tsp vanilla
1 cup water
1 tsp coffee
1 tsp Union Apple Crisp Blend
4 eggs
3 cups flour
3 tsp baking powder
•
For the streusel:
1 tsp apple crisp @unionspiceblend
1/2 cup brown sugar
2 tbsp oil
2 tbsp flour
➡in a bowl mix the first 6 ingredients together and then add the dry. And mix.
➡pour half the batter into a 9x13 pan and make the streusel by mixing all the ingredients together into a wet crumb
Sprinkle half of the crumb onto the batter
➡pour the rest of the batter over the crumb and sprinkle on the rest of the crumb
➡bake 350 for about 40 min or until toothpick inserted comes out clean.
❄freezes amazing

Pizza
Rosemary Garlic Blend
Nothing is better than a crisp hot slice of pizza. Nuff said.
3 cups flour
1 cup warm water
1 Tbsp yeast
1 Tbsp oil
Tsp salt
Rosemary garlic blend
Jalapeños
Olives
Tomatoes
Any other stuff you wanna top your pizza with!!
➡Mix all ingredients together and let rise for an hour
➡top with pizza sauce and cheese sprinkle rosemary garlic spice blend over the cheese and top with your favorite toppings!!
➡bake 500 for about 15 or until cheese is nice and bubbly

Grilled Chicken Salad
Rosemary Garlic Blend
It may be cold. But I grill 365 days a year. Whether it’s an indoor grill or simply broiling the chicken in the oven. I don’t let the cold weather stop me.
•
1 package beef fry
1 package chicken cutlets (approx 2lbs)
Lettuce
Tomatoes
Red onions
Avocado
For the marinade:
1 tbsp Union Spice Blend Rosemary Garlic
2 Tbsp honey
2 Tbsp oil
➡in a bowl mix the marinade ingredients and place the chicken in it and let marinade at least half an hour
➡meanwhile in a small frying pan place the beef fry and fry until crisp (do not put oil in the pan. The beef has plenty of its own) (approx 8-12 minutes)
➡grill the chicken. Approx 3-5 minutes per side (❗if you do not have a grill pan or don’t wanna go out in this cold weather you can make in a regular frying pan or even in the oven on 400 for 20 minutes)
➡assemble the salad by cutting up the vegetables, sprinkling beef fry over the salad and laying slices of chicken over it.
❗because the beef fry and chicken have such bold intense flavors I don’t add dressing to the salad. If you find it a bit dry you can drizzle with some olive oil.
❄best served fresh

Lamb Meatballs
Mediterranean and Apple Crisp Blends
Hi! It’s here! My spices!! In all it’s glory! And I am so excited to share an exclusive recipe with you!! I launched union spice blend a little over 2 months. I have been working on this project for many many months. Spices is something I have always loved cooking with and I have been making my own blends for ages. It gets me out of the kitchen faster. And less clutter on my counter. One bottle vs dozens. My husband came up with the idea to market them. After much work and effort. Here I am with my beautiful spices!
These meatballs are extremely flavorful. The first time I made them I was skeptical of the sweet and savory flavors but once you’ve tried it I promise you will understand why I am so obsessed with it!!
1 1/2 lbs ground meat
1 egg
1 tsp union spice blend Mediterranean Spice
1 tsp union spice blend Apple Crisp Spice
Garlic powder
Salt and pepper
1/2 red onion chopped very tiny
•In a bowl place all the ingredients and mix everything together **don't over mix or the meat will get tough. Shape into balls and place on a lined cookie sheet.
•bake on 400 for 30 minutes. Serve with hummus and rice.
Apple Crisp
Apple Crisp Blend
Sometimes it’s the most basic recipes that we all want. I’ve had a number of people ask me for my Apple crisp recipe and I always said sure hang on lemme get you link. Only to find I have every variation of apple crisp except a traditional one. So here it is!!
•
4 medium apples
1/8 cup brown sugar
3/4 tbsp lemon juice
1 tsp apple crisp spice.
➡Peel and dice the apple and mix with juice, apple crisp spice and sugar and set aside.
➡To make the crumbs:
2 cups flour
3/4 cup sugar
1/3 cup brown sugar
1 1/2 tsp apple crisp spice or cinnamon
1/2-3/4 cup oil
➡mix the first 4 ingredients together and slowly add the oil until you get a crumby consistency. (I mix this all by hand)
➡bake 350 for 45 minutes
❄freezes amazing

9x13 Cholent
Cholent Blend
I was complaining years ago to a friend of mine that I wasn’t happy the way my cholent was coming out. She told my to try making it in a 9x13 pan and I did. And it was amazing! ❗disclaimer❗ I still use my croc pot on a weekly basis!! I make 9x13 cholent when I want to make a small one for Friday afternoon or I don’t want to be busy with cleaning a croc pot motzei shabbos. (In this case I use a deep 9x13 pan)

2lb chuck roast cut into large pieces
1 large onion or 3 small ones
1 Tbsp minced garlic
3/4 cup barley
1/4 cup cholent beans
2 tbsp @ cholent blend
2 Tbsp paprika
1 Tbsp garlic powder
1 Tbsp onion powder
2 Tbsp salt
1 Tbsp Pepper
4 Potatoes cubed
kishke (optional)
Water
❗I measured the spices out for you. But totally use more/less to your preference
➡dice the onion small and place them in the pan. Place the rest of the ingredients in the pan add water and cover very tightly!!
➡place on a cookie sheet (in case it drips) bake 200° if you want a very deep cholent you can put in oven Thursday night or start baking it whenever you normally make your cholent.
❗cholent is very tricky to write a recipe for cuz I’ve never tasted two that are the same. Even when I make my own week after week. So do what works for you. And what your family likes. Add a little more salt. A little less salt. You get the idea!!

Wings
A perfect blend of spicy and savory! You’re going to have your family licking their fingers!
Hot Stuff and Mediterranean Blend
Approx 2 lbs wings
1 tsp unison spice hot stuff
1 tsp union spice Mediterranean
1/2 cup bbq sauce
1/4 cup hot sauce (I used franks)
➡mix everything together and rub it over the chicken
➡place on cookie sheet and bake 400 for about 45 minutes
Rosemary Garlic London Broil Salad
Rosemary Garlic Blend
This London Broil is my go to. I make it every single shabbos. Serve it on yomtov. Serve it at bbqs that I want to fancy up a notch or two. It’s a great cut of meat, that’s not expensive A no fail recipe that you can serve alone or in a salad like I did. You can cook it rare or well done. Really, whatever makes you happy! Now with my spice blend this recipe takes seconds to prepare! When I was testing this recipe I automatically bought two London broils knowing my “quality control department” (aka me) will eat the first one!!
1 2lb London broil
2 tbsp oil
2 tbsp Union Spice Rosemary Garlic Blend
1 tsp soy sauce
1 bag mixed greens
1 box colored cherry tomatoes
1/2 medium red onion sliced
Handful of toasted almonds
Pat the London broil dry and drizzle with oil and soy sauce on both sides and rub in the spices well on both sides.
Let marinate for about 30 minutes and grill 6 minutes per side for medium or 8-10 minutes for well done. (If you don’t have access to a grill or in the winter, you can also broil it in the oven)
Once done let sit for 10 minutes before slicing
For the dressing:
1/2 cup oil
1/4 cup vinegar
1/4 cup mustard
1/4 cup honey
1 clove garlic crushed or 1 frozen cube
Mix all ingredients together and drizzle over salad before serving.
To assemble:
Place the lettuce greens on a plate and arrange the vegetables and sliced meat over it
Drizzle dressing on top.

Moroccan Salmon
Mediterranean Blend
The flavors in this dish are mind blowing! So many explosions will be going on in your mouth! It’s great for supper or even a Friday night appetizer!
6 slices salmon
1 can chick peas drained
1 tsp Union Spice Mediterranean Spice Blend
Salt and pepper
2 garlic cloves crushed
4 cubes cilantro or handful of fresh cilantro chopped
2 tbsp lime juice
1/3 cup oil
➡place the salmon in a 9x13 pan and place the chick peas around it.
➡mix the rest of the ingredients together to create a sauce and pour over the salmon. Cover tightly and bake 350 for 40 minutes
➡serve with rice or quinoa
❄best served fresh but can be frozen

Sausage Jambalaya
Hot Stuff Blend
My husband and I went to New Orleans on a two day vacation last year. I must say it was the most unique experience I have ever had! I kept asking him if we're still in the U.S.?! New Orleans is the most culture rich environment I have ever been in! I came home with this recipe. It's a big hit in my family since it's bursting with so much flavor. I like to serve it Friday night as a side dish.
1 package of sausages
1 cup rice cooked according to package directions
1 can tomato sauce
1 large tomato diced
1 onion diced
1 jalapeño diced (optional)
Garlic powder
Paprika
Salt and pepper
1 tsp Union Spice Blend Hot Stuff
Parsley
➡sautee onion and add tomatoes and jalapeno and sauce.
➡add spices ❗be very generous with all the spices. You want a lot of flavor!
➡let it simmer a bit. It will get very thick. You may want to add some water
➡add sliced sausage and let simmer. For about 30 min. Add rice. Mix all together and serve warm.
❄this dish freezes beautifully. When defrosting make sure it's fully defrosted before warming to it doesn't turn to mush.
